Pork shoulder chop marinade

You don't need the finest cuts of meat to eat like a king. All you really need is the right marinade. Here, Pat LaFrieda — a New York butcher and the star of "Meat Men" on the Food Network — shares mouthwatering ways to get pork shoulder chops and short ribs ready for the grill.

Ingredients

  • 1 cup red wine
  • 1 cup balsamic
  • 2 tablespoons olive oil
  • 3 ounces shallots, cleaned and cut
  • 1/2 cup blueberries

Preparation

Step 1

Wilt down the shallots in the olive oil until brown.

Add in red wine and balsamic and bring to a boil. Reduce to half.

In the final 5 minutes of simmering, add in 1/2 cup blueberries.

Marinade pork chops in half of this mixture for at least an hour. Save the other half to drizzle over the finished grilled chops.
