POTATO DUMPLINGS

Ingredients

  • Boil 6 potatoes, chill and mash
  • 3 egg yolks
  • 1 teaspoon salt

Preparation

Step 1

Make well in center. Put in 1 cup flour, add more flour if needed to make elastic dough. 2 - 2-1/2 cups in all. The dough should not be too firm. Make into sausage links. Cut 1 inch long. Press thumb into each segment to curl edges of dough. Drop these into 4 quarts of boiling salted water. Cook 3-4- minutes until they rise to top. Lift with slotted sloon. Serve with butter and onions. Fry bacon and crumble into dumplings with butter.
