Ingredients
- 12 oz spaghetti
- 3 T EVOO, plus additional for frying eggs
- 2 chopped garlic cloves
- 1 red chili pepper, sliced
- 1/2 c chopped fresh herbs
- 4 lg eggs
- Shaved Parmesan
Preparation
Step 1
1. Cook spaghetti according to the package directions.
2. In a small saucepan, warm EVOO w/garlic cloves & pepper.
3. Toss w/spaghetti & herbs.
4. In a lg nonstick skillet, fry eggs in EVOO until whites are set, 2-3 min.
5. Serve on spaghetti w/shaved Parmesan.
