Bacon & Egg Casserole

Ingredients
- 5 eggs
- 5 slices bacon
- (Salt & pepper to taste)
- (Garlic powder to taste)
- 2 T chopped onion
- 1 T heavy cream
- 6 slices Swiss cheese
- 1/2 bag spinach
- 1/2 carton grape tomatoes, halved
- 1/4 red onion, sliced thin
- (1/2 c low carb ranch dressing)

Preparation
Step 1
Preheat oven to 350°. Cook and crumble
bacon. Whisk together eggs, bacon, salt,
pepper, garlic powder, onion & cream in large
bowl. Pour into 9x13” baking dish. Bake 30 min
or until eggs are set. Top with cheese slices;
return to oven until cheese melts.
In med bowl toss together spinach,
tomatoes, onion & dressing.
