Cream Cheese Mints
- 1 (3 oz.) pkg. cream cheese, softened
- 2 1/2 C powdered sugar (approx.)
- granulated sugar
- peppermint flavoring
- food coloring
- rubber molds
Knead cream cheese until softened. Add a few drops of peppermint flavoring and food coloring. Knead in 2 1/4 - 2 1/2 C powdered sugar. Pinch a small piece and roll into a ball. Roll the ball in granulated sugar and push into a ruber mold. Remove any excess candy. Push another glob of candy against candy in the mold to pull molded candy from mold. Store in an airtight container in the refrigerator. Place waxed paper in between each layer. Serve at room temperature.
