Cheese Polenta

Ingredients

  • 1/2 cup cornmeal
  • 1 3/4 cup skim milk
  • 2 tablespoons plain lowfat yogurt
  • 2 tablespoons grated parmesan cheese
  • 1/4 teaspoon pepper
  • 1/8 teaspoon nutmeg
  • Dash cayenne pepper

Preparation

Step 1

Place the cornmeal in a 2 quart microwave safe casserole. stir in the milk. cover tightly and cook on high for 1 minute. Stir well

Cover again and cook on high for 4 to 5 minutes more, stirring every minute until liquid is absorbed.

Stir in remaining ingredients

Divide the mixture among four 5-6oz. custard cups. cover and set aside until serving time.
