2½ ready-to-cook broiler/fryer, cut up. Or 2 lbs. of your favorite pieces of chicken.
Seasoned flour (¼ cup flour, 1 tsp. paprika, ¼ tsp. salt and ⅛ tsp. pepper).
cup butter or margarine (¼ cup = ½ cube)
Start heating oven to 425 degrees F. Place butter/margarine on a shallow baking sheet and place in oven to melt. Remove pan from oven when butter/margarine is melted. Put seasoned flour in a plastic bag. Add chicken, a few pieces at a time, shake well, and place pieces, skin side down, on baking sheet. Repeat until all pieces have been coated with seasoned flour and placed on baking sheet. Return to oven and bake for 30 minutes. Remove pan from oven, turn chicken, return pan to oven and continue baking for 15 minutes more, or until golden brown and fork tender. Makes 3 -4 servings.
