  • 2 cups old-fashioned oats
  • 3/4 cup dried cranberries
  • 3/4 cup chopped walnuts
  • 3/4 cup toasted wheat germ
  • 2 tablespoons packed light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup honey
  • 1/2 cup vegetable oil
  • 2 large egg whites

Preheat the oven to 325 degrees F. Spray a 13-by-9-inch metal baking pan with cooking spray. Line the pan with foil, with the ends extending 2 inches over the short sides of the pan. Spray the foil with cooking spray.

In a glass pie plate, spread out the oats and microwave on high in 1-minute increments until fragrant and golden, stirring occasionally, 4 to 5 minutes. Cool to room temperature.

In a large bowl, combine the cooled oats, cranberries, walnuts, wheat germ, brown sugar, cinnamon and salt. Stir in the honey, oil and egg whites until well mixed. Transfer to the prepared pan. Use a wet hand to press the mixture into an even layer.

Bake until dark golden, about 35 minutes. Cool in the pan on a wire rack.

When cool, use the foil to transfer to a cutting board. Cut lengthwise into 6 strips, and then cut each strip crosswise into quarters. (You should have roughly 3 1/4-by-1 1/2-inch bars.) Bars can be stored in a tightly sealed container at room temperature up to 1 week, or in the freezer up to 1 month.
