Ingredients

  • 1 lb. pork, veal or beef, cut into 1/2 " cubes
  • 1 cup celery, cut fine
  • 1 cup sliced onions
  • 4 T. soy sauce
  • 1 (no. 2) can bean sprouts
  • 1 T. fat
  • 1 t. salt
  • 1/8 t. pepper
  • 1 cup water or stock
  • 3 T cornstarch
  • OPTIONAL: 1 can drained water chestnuts.

Preparation

Step 1

Brown meat in hot fat in pressure cooker.

Add celery, onions, salt, pepper and water.

Make sure gasket is secure in lid. Place lid on pot and turn to secure seal on pressure cooker.

Cook over high heat till control jiggles, then turn heat down so control only jiggles gently.

Cook for 10 minutes.

Turn off heat and cool pan for 5 minutes, then reduce pressure instantly under cold water.

Add bean sprouts and water chestnuts (if desired).

Simmer in open pan for 3 minutes.

Add soy sauce and mix well.

Thicken gravy with 3 tablespoons cornstarch, dissolved in 1/2 cup cold water.

Serve hot over rice.
