Ingredients
- 1/4 cup butter
- 2 tbsp shallots, minced
- 1/2 tsp chili pepper flakes, dry
- 1 tsp fresh garlic minced
- 12 medium-sized scallops, raw with muscle picked off
- 1/4 cup dark rum
- 1/2 maple syrup
- 1/3 cup whipping cream, room temperature

Step 1
Melt butter and add shallots, pepper flakes and garlic. Lightly saute until shallots are opaque and the pan is hot. Add scallops and cook about 1 min on each side. While pan is hot, add rum to deglaze. Add maple syrup and cook for about 3 min on high heat. Add cream, and swirl to incorporate.
