Ingredients

  • 1/4

    cup butter

  • 2

    tbsp shallots, minced

  • 1/2

    tsp chili pepper flakes, dry

  • 1

    tsp fresh garlic minced

  • 12

    medium-sized scallops, raw with muscle picked off

  • 1/4

    cup dark rum

  • 1/2

    maple syrup

  • 1/3

    cup whipping cream, room temperature

Directions

Melt butter and add shallots, pepper flakes and garlic. Lightly saute until shallots are opaque and the pan is hot. Add scallops and cook about 1 min on each side. While pan is hot, add rum to deglaze. Add maple syrup and cook for about 3 min on high heat. Add cream, and swirl to incorporate.
