Tropical Fruit Cake

RECIPES (this is a bit premature for our present weather conditions, but you can substitute other fruits to your climate and liking)
Tropical Fruitcake

Ingredients

  • Cake:
  • 4-5 bananas
  • 3-4 peaches
  • 2 mangoes
  • 1 cup dates, pitted
  • 1/2 cup coconut oil
  • 3/4 cup psyllium husk seed
  • 1/4 soy lecithin
  • Raw Chocolate Coulis:
  • 1/2 - 1 avocado
  • 2-3 TBS of raw cacao powder
  • 4-5 dates
  • 2 TBN agave syrup

Preparation

Step 1

Cake:
Blend all fruit together in a high speed blender. You may have to add a little water. 
Add coconut oil, psyllium husk seed and lecithin (these will help to hold it all together. Remove from blender and place in a springform pan and freeze until set. 
Remove from freezer and decorate with raw chocolate coulis and raspberries.

Raw Chocolate Coulis:
Blend all together in a high speed blender and then put in the freezer for about an hour. Remove and place into a cake decorator. (even the Tupperware decorators work great!
