Cha Cha Queso Corn

Ingredients

  • Kernels from 5-6 ears of corn (grilled in their husks)
  • 1-2 TB Light Mayonnaise
  • 1 jalapeno pepper, seeds removed, minced (leave seeds if you like more heat)
  • 1 T butter
  • 1 T olive oil
  • 1-2 T chopped cilantro
  • 1 t lime juice
  • 2 gloves garlic, minced or crushed in garlic press
  • 8 oz Queso Fresco, crumbled (or as much as desired)
  • salt and pepper, to taste (kosher salt recommended)

Preparation

Step 1

1. Grill the ears of corn in their husks.
2. Heat oil and butter in skillet over low heat. Add garlic, stir constantly for about 1 minute, just long enough for garlic to turn translucent and release some flavor
3. Add butter, oil, garlic mixture and lime juice to corn, mixing in the jalapeno, cilantro, and Vegannaise
4. Just before serving, mix in crumbled cheese
5. Salt and pepper to taste
