Ingredients

  • 1 cup diced tomato
  • 1/2 cup diced peeled English cucumber
  • 2 tablespoons chopped green onions
  • 2 tablespoons chopped fresh cilantro
  • 2 teaspoons minced seeded jalapeño pepper
  • 2 teaspoons fresh lemon juice
  • 2 teaspoons olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Preparation

Step 1

Combine all ingredients in a medium bowl; toss gently. Let stand for up to 2 hours.
