Ingredients

  • 2 tsp. fat or salad oil
  • 1 lb. ground beef
  • 1/2 lb. ground pork
  • 1 1/2 cups thinly slice onion
  • 1 cup finely diced celery
  • 1 small clove garlic, peeled & cut fine
  • 1/4 green pepper, diced
  • 2 cups canned tomatoes
  • 1-2 tbsp. chili powder (or to suit taste)
  • 2 tbsp. cold water
  • 2 tsp. salt
  • 1 tsp. sugar
  • 1 tsp. Worcestershire sauce
  • 4 cups cooked or canned red kidney beans
  • NOTE: For hot chili, season with a speck of cayenne pepper to suit taste

Preparation

Step 1

Melt oil and brown beef and pork.

Add onion, celery, garlic and green pepper and continue stirring and sautéing until onions, celery and garlic are golden in color (about 10 minutes).

Add tomatoes, chili powder (which has been mixed with cold water), salt, sugar and Worcestershire sauce.

Cook slowly for about 1 hour.

Add beans, which have been drained. Cook until well heated and of desired thickness. If too thick, add more tomatoes or water.

Serve with macaroni, crackers , hard rolls or cornbread.
