Jalapeno Chicken

Ingredients

  • 4 tsp less sodium taco seasoning mix
  • 4 (6 oz) skinless, boneless chicken breast halves
  • Cooking spray
  • 1/2 cup (2 oz) shredded Monterey Jack cheese with jalapeno peppers
  • 2 Tbsp sliced jalapeno peppers

Preparation

Step 1

Sprinkle taco seasoning over both sides of chicken. Place a large nonstick skillet over medium heat until hot. Coat chicken with cooking spray and add to pan. Cook 7 minutes on each side or until chicken is done.

Remove pan from heat; sprinkle chicken with cheese. Cover and let stand 3 minutes or until cheese melts. Top each chicken breast with jalapeno slices.

Serving suggestion: Serve over a bed of spanish rice and black beans.
