Veal Cordon Blue

Ingredients

  • 2 pounds ground veal
  • salt
  • pepper
  • Swiss cheese slices
  • ham slices
  • flour
  • 2 eggs
  • breadcrumbs
  • mushroom gravy mix

Preparation

Step 1

Mix veal with salt and pepper. Form 8 rectangular patties. Layer Swiss cheese and ham in center of one patty and cover with another. Pinch sides of patty together to seal and for a small loaf.

Roll in flour then egg that has been mixed with a couple of tablespoons of water then in fine breadcrumbs. Refrigerate 1/2 hour. Saute in 3 Tablespoons butter 1 Tablespoon oil for about 4 minutes per side. Make gravy mix and pour over loaves.
