Ingredients

  • 5 lbs. red potatoes
  • 1-3/4 c. light sour cream
  • 1-3/4 c. light mayonnaise
  • 3 T. Dijon mustard
  • 2 t. red wine vinegar
  • 6 hard-cooked eggs, chopped
  • 1/3 c. sweet relish
  • 1 celery stalk, diced
  • 5 green onions, chopped
  • 4 dashes hot sauce
  • 1 t. dried dill weed
  • 1 t. garlic powder
  • 1/4 t. onion powder
  • salt & pepper to taste

Preparation

Step 1

Place potatoes, cut in half, in a pot with enough water to cover. Bring to a boil & cook for 15 minutes or until easily pierced with a fork. Drain. Cool & cut into small cubes.
In a medium bowl, mix sour cream, mayonnaise, mustard, vinegar, hot sauce, dill weed, & garlic & onion powder. Add eggs, relish, celery & onion. Salt & pepper potatoes well. Add potatoes to mixture & refrigerate until cold.
