Red Sofrito

Ingredients

  • 2 lbs tomatoes
  • 2 red bell peppers
  • 2 medium yellow onions
  • 5 garlic cloves
  • 1 bunch cilantro
  • 1/2 c extra virgin olive oil

Preparation

Step 1

Coarsely chop tomatoes, peppers and onions. Combine w/garlic cloves and cilantro. In batches pulse mix in a food processor until finely chopped. In a large pot heat olive oil over medium- high heat until simmering. Add Mixture & cook until thickened & reduced, about 20-30 minutes. cool and freeze, makes 3 cups
