Ingredients

  • 2 egg whites, lightly beaten
  • 3 c mashed cooked sweet potatoes, about 2 1/4 lb
  • 1/3 c brown sugar
  • 1/3 c skim milk
  • 2 T reduced calorie margarine, melted
  • 1 t vanilla
  • 1/2 t salt
  • Pam
  • 1/2 c packed brown sugar
  • 1/4 c flour
  • 2 T chilled reduced calorie margarine
  • 1/3 c chopped pecans

Preparation

Step 1

Combine first 7 ingredients in a bowl and stir will. Spoon mixture into an 8 inch baking dish coated with spray. Combine brown sugar and flour. Cut in 2 T chilled margarine with pastry blender until crumbly. Stir in pecans. Sprinkle over sweet potatoes. Bake at 350 for 30 minutes.
