Ingredients

  • 1 1/2 lbs. ripe tomatoes, chopped (4 cups)
  • 1/2 C packed fresh basil leaves, chopped
  • 3 T olive oil
  • 1/4 tsp. freshly grated lemon peel
  • salt & pepper
  • 1 bag frozen ravioli
  • 1/4 C freshly grated parmesan cheese

Step 1

In large bowl, combine tomatoes, basil, olive oil, lemon peel, 1/4 tsp. salt & 1/4 tsp. pepper. Let stand at room temperature for at least 15 minutes or up to 30 minutes to blend flavors.

Meanwhile, boil ravioli according to package directions.

Add hot pasta to sauce and toss to coat. Sprinkle with parmesan to serve.
