Poached Jumbo Prawn

Ingredients

  • Seasoning:
  • 1-1/2 lb fresh prawn
  • 6 slices ginger
  • 3 stalks scallion
  • 1 tablespoon rice wine
  • 8 cups water
  • 1/2 teaspoon “HON-DASHI”
  • Dipping sauce (2 tablespoons soy sauce, 1/2 teaspoon mustard)

Preparation

Step 1

1. Trim the prawns, and de-vein.
2. Bring water to boil, add ginger, scallion, and seasoning; then arrange prawns in the pot, bring to boil again for 1 1/2 minutes.
3. Remove from stock, serve hot with dipping sauce.
