Rhubarb Strawberry Pie

Ingredients

  • 1 C sugar
  • 1/2 C flour
  • 1 lb fresh rhubarb, chopped
  • 2 pt. fresh strawberries
  • double crust pastry
  • 2 TBSP butter
  • 1 egg yolk
  • 2 TBSP sugar

Preparation

Step 1

Preheat oven to 400 degrees. In a large bowl mix flour and sugar. Add strawberries and chopped rhubarb. Toss and let stand for 30 minutes. Pour filling into pie crust. Dot top with butter and cover with top crust. Seal edges. Apply yolk to top of pie crust using pastry brush. Sprinkle with sugar. Cut small holes in top. Bake 400 degrees for 30-40 minutes or until bubbly and brown. Cool on rack.
