Grecian Style Stuffed Chicken Breasts

1 cup Spinach, raw Net carbs 0.2
2 tbs Feta Cheese, crumbled Net carbs 0.8
1 tsp Mayonnaise Net carbs 0.1
1 Chicken Breast Net carbs 0
3 piece Bacon Net carbs 0.1
Spices have a bit but I am not sure how much

Ingredients

  • Filling:
  • 1- 10 oz. Package of Frozen Chopped Spinach (Defrosted)
  • 1- 6 oz Package Feta Cheese - Crumbled (I buy Crumbled Garlic and Herb Flavor)
  • 1 cup Mayonase
  • Garlic to taste
  • Favorite Herbs (or I skip if I get the seasoned Feta)
  • All the Rest:
  • 1 Package Raw Bacon (DONOT get pre-cooked)
  • 6-8 boneless skinless chicken breasts (depending on their size)

Preparation

Step 1

Heat oven to 350

Squeeze spinach to drain. Mix the filling ingredients together in a seperate bowl.

Put spoonfuls of the filling into the pockets in the chicken. Wrap each filled breast with 2 strips of bacon and secure with a toothpick. Place in a lightly "pam-ed" baking dish.

Bake for 40-50 minutes or until chicken is done.
