Ingredients

  • 3 large carrots, sliced (2 cups)
  • 2 medium stalks celery, sliced (1 cup)
  • I large onion, chopped (1 cup)
  • 2 chicken breasts, cut in cubes (about 1 lb)
  • 3 c water
  • 16 oz chicken broth
  • 3/4 c uncooked barley
  • 1/4 t pepper
  • 1 14 oz can diced tomatoes, undrained
  • 2 T parsley
  • 1 t thyme

Preparation

Step 1

Place carrots, celery and onion in 4-5 qt slow cooker. Place chicken on top, and add remaining ingredients except herbs. Cover, and cook on low 8-9 hours. Stir in herbs, increase heat to high, and cook 10-15 minutes longer.
