Ingredients

  • Meat Mixture:
  • 1 pound ground pork
  • 1 pound ground beef (extra lean)
  • 1 large onion
  • 4 stalks celery
  • 1 clove garlic (crushed)
  • 1 teaspoon sage
  • 1 teaspoon parsley
  • 1/4 teaspoon savory
  • 1/2 teaspoon thyme
  • 1/8 teaspoon cloves
  • salt & pepper
  • 1 medium potatoes
  • 2 (284ml) cans beef broth
  • 1 can water
  • 1 tablespoon cornstarch
  • 1/2 cup water
  • Pastry:
  • 3 cups all purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 tablespoon sugar
  • 3/4 cup lard
  • 3/4 cup butter
  • 1/2 cup cold water
  • 2 teaspoon vinegar
  • Pastry glaze:
  • 1 egg yolk
  • 2 tablespoons milk

Preparation

Step 1

In soup pot, scramble ground pork and ground beef until brown, drain off fat. Add onion, celery, garlic, spices (except salt), 2 cans beef broth and 1 can water. Cover and simmer for 1 hour. Add diced carrots and potatoes and continue to simmer uncovered for 1 hour or until little liquid remains.
Mix 1 tablespoon cornstarch with 1/2 cup water, add salt, add to meat mixture, stir well.
Prepare pastry, roll to 1/4" thick, line large muffin tins. Using large icecream/potato scoop, fill lined tin about 1/2 way. Lay top pastry on, pushing down side to seal. Brush lightly with egg water mixture.
Bake in 350F oven, for 35 - 45 minutes.
