PRESSURE COOKER: BEEF STEW

Ingredients
- 2 lbs. beef, cut into 2" cubes
- 2 T. fat
- 1 1/2 t. salt
- 1/4 t. pepper
- Sprinkle with paprika
- 1 onion, cut fine
- 2 stalks celery, cut fine
- 6 carrots, cut in half crosswise
- 6 medium sized potatoes. cut in quarters
- 1 1/2 cup water or beef stock
- 1 1/2 T. flour to thicken gravy

Preparation
Step 1
Brown meat in hot fat in pressure cooker pot. Season with salt and pepper, add water.
Making sure gasket is secure in lid, cover pot and turn lid to secure seal.
Start cooking on high heat until control jiggles, then reduce heat to slow jiggles on control and cook for 15 minutes.
Cool instantly. Add onions, carrots and potatoes.
Cover again and secure seal and cook for 10 minutes after control jiggles.
Cool pan for 5 minutes, then reduce pressure instantly under cold water.
Thicken pot with flour thickened in a little water.
