Triple Fruit Scones

Ingredients

  • 3 c flour
  • 1/3 c sugar
  • 1 tbls baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 6 tbls chilled butter
  • 1/2 c chopped dried apricots
  • 1/3 c dried cranberries
  • 3/4 c low fat buttermilk
  • 2 tsp grated orange rind
  • 1 egg
  • 1 egg white

Preparation

Step 1

Preheat oven to 400.

Combine flour, sugar, baking powder, soda and salt; cut in butter with pastry blender until mixture resembles coarse meal. Stir in apricots and cranberries.

In a separate bowl, combine buttermilk, orange rind, egg and egg white. Add to flour mixture, stirring until moistened. Turn dough onto lightly floured surface; knead lightly 4 times. Roll dough into 12x6 rectangle. Cut into 8 squares and then cut each square into triangles. Place on greased oookie sheet and sprinkle with sugar.

Bake 12 minutes or until golden brown.
