Ingredients

  • 1 lb small red potatoes, cut into fourths (about 3 cups)
  • 4 medium carrots, sliced (2 cups)
  • 1 medium onion, chopped
  • 2 cloves garlic, chopped
  • 2 cans (15 oz) great northern beans, rinsed and drained
  • 1 14 oz chicken broth
  • 1 cup water
  • 1 1/2 cups diced ham
  • 1 t Italian seasoning
  • 2 T fresh parsley
  • 1 T olive oil

Preparation

Step 1

Put all ingredients except oil and parsley in 3-4 qt slow cooker. Cover and cook on low 8-10 hours. Stir in parsley and oil.
