Turkey Mole Soup

Ingredients
- 1 T olive oil
- 1 1/4 lb ground turkey
- 1 c chopped onion
- 1 c chopped green pepper
- 2 T chili powder
- 4 garlic cloves, minced
- 1/4 cup mole
- 2 14 oz cans chicken broth
- 1/2 t salt
- 1/2 t pepper
- 1 can black beans, drained
- 1 14 oz diced tomatoes
- 1 can chopped green chiles

Preparation
Step 1
Heat oil in dutch oven over medium heat. Add turkey and cook 5 minutes until browned, stirring to crumble. Add onion, bell pepper, chili powder, and garlic. Cook 5 minutes. Combine mole and chicken broth, stirring with a whisk. Add broth mixture and other ingredients. Bring to boil. Cover and reduce heat, and simmer 20 minutes.
