Avocado Lime Cilantro Ice Cream

- 2/3 cup sugar
- 2/3 cup water
- 1 and 1/2 cups packed fresh cilantro leaves
- 1 pound firm ripe avocados (about 2), coarsely chopped
- 1 tablespoon fresh lime juice
- 1 cup whole milk

Preparation
Step 1
Bring sugar and water to a boil in a small pot, stirring until sugar has dissolved. remove from heat and add cilantro. let steep 20 minutes. pour through a fine sieve set over a bowl and discard the cilantro. refrigerate cilantro syrup until cold, about 25 minutes.
Once the cilantro syrup is cold, puree avocados, cilantro syrup, and lime juice in a blender until smooth.
Transfer mixture to a bowl and stir in milk until well combined. cover and refrigerate until cold—2 hours.
Freeze and churn avocado mixture in an ice cream maker according to manufacturer’s directions (usually 30 minutes), then transfer to the cold loaf pan. cover with plastic wrap and freeze overnight.
To serve, place scoops of ice cream into bowls and sprinkle a teaspoon of fresh chopped cilantro and a teaspoon a fresh lime zest on top. you can adjust the amounts to your liking. You can add two teaspoons of fresh lime zest and two teaspoons of chopped cilantro.
The ice cream can be frozen for two weeks covered tightly with plastic wrap and aluminum foil.
