Cheesy Sausage Subs

  • 1 pound smoked sausage, sliced
  • 1 tablespoon EVOO
  • 1 large onion, sliced
  • 1 green bell pepper, thinly sliced
  • 2 cloves garlic, chopped
  • 1/4 cup chicken stock
  • 1 teaspoon hot sauce
  • 1 baguette - split, quarted and toasted
  • 4 slices provolone

Step 1

In large skillet, cook sausage in EVOO over medium until browned, 6 minutes; transfer to plate. Cook onion, bell pepper and garlic over medium, 3 minutes. Stir in sausage, stock and hot sauce; season. Spoon mixture onto baguette bottoms; add cheese and baguette tops.
