Cheesy Parmesan Garlic Bread

You can substitute finely shredded white cheddar for the Parmesan cheese and fresh chopped chives for the parsley.

Ingredients

  • 1 loaf French bread (not the long thin kind)
  • 1/2 - 3/4 cup butter, softened
  • 1/2 cup mayonnaise
  • 1-2 tablespoons minced garlic
  • 3-4 teaspoons dried parsley or 3 tablespoons fresh parsley
  • 1/2 teaspoon dried oregano
  • 1/3 - 1/2 cup grated Parmesan cheese

Preparation

Step 1

1. Preheat oven to 375 degrees

2. Cut slices down the length of the bread, at about 1 inch intervals, without cutting all the way through.

3. In a bowl, combine the softened butter with mayonnaise, minced garlic, parsley and Parmesan cheese: Mix well to combine.

4. Spread butter/garlic mixture between the bread slices, and then on top of the loaf.

5. Wrap the bread in heavy-duty foil, leaving the top partially uncovered.

6. Bake until heated through, about 15 minutes.

7. Serve warm.

8. To make ahead: Combine all ingredients, except the bread. Store covered in the refrigerator for up to 3 days or freeze in a covered container.
