Ingredients

  • Topping:
  • 2 eggs
  • 5 1/2 oz can tomato paste
  • 2 lb lean ground beef
  • 1 large onion, finely chopped
  • 1 cup oatmeal flakes (not instant)
  • 1 cup cooked lentils
  • 1 Tbsp each: oregano, sage and thyme
  • 1 tsp salt
  • 1/4 cup each: brown sugar and ketchup
  • 1 Tbsp each: any mustard and horseradish

Step 1

Preheat oven 375 and lightly oil a loaf pan
Lightly whisk eggs in a large bowl.
Whisk in tomato paste
Add ground beef, onion, oatmeal, lentils and seasonings
Using hands stir and blend ingred thoroughly and evenly combined
Mound mixture into prepared loaf pan on parchment lined baking tray

Whisk together topping ingredients and brush evenly over loaf
Bake until loaf is cooked through, 45 minutes or so; Meatloaf is done when a thermometer inserted in thickest part reads 180 F (70 C)
