Turkey Tortilla Soup

  • 1 1/4 lb ground turkey
  • 1 t olive oil
  • 2 cans chicken broth
  • 1 16 oz jar salsa
  • 1 11 oz can Mexican style corn, drained
  • 1 T lime juice
  • 2-3 T chopped fresh cilantro
  • Salt and pepper
  • 2 oz baked tortilla chips

Step 1

Heat oil in saucepan over medium heat until hot. Brown turkey in pan 6-8 minutes or until no longer pink, stirring to separate meat. Add chicken broth, salsa, corn and lime juice to saucepan. Reduce heat to low; simmer, covered about 10 minutes.
