Ceviche de Camarones

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1/2 lb scallops, cut into small dice
  • 1 shallot, minced
  • 1 clove garlic, minced
  • 1 jalapeno or serrano chili pepper, seeded and minced
  • 1 celery rib, small dice
  • 3 lemons, juiced
  • 3 limes, juiced
  • Salt and pepper to tast
  • 1 T cilantro, rough chopped
  • 1 T parsley, rough chopped
  • Tortilla chips

Preparation

Step 1

Bring a pot of water to a boil and add a large pinch of salt. Poach the shrimp until they are just cooked through, about 1 minute. Brain well and transfer to a sheet tray. Refrigerate until cold. Cut the shrimp into small dice and transfer to a bowl.

Fold in the scallops, shallot, garlic, chili pepper, celery, lemon juice, lime juice, salt and pepper.

Allow the ceviche to marinate at least 30 minutes but up to 6 hours. fold the cilantro and parsley and serve with chips.
