Potatoes: Parmesan

  • 4 large baking potatoes, sliced 1/8 inch thick
  • 1/2 c unsalted butter, melted
  • 1/2 c Parmesan cheese, grated
  • 1/2 c parsley, minced
  • salt and pepper

Preparation

Step 1

Preheat oven to 350 deg. Slice potatoes, but do not peel. Layer in 9 X 13 inch casserole dish and drizzle melted butter over slices. Sprinkle with salt and pepper. Cover with foil and bake for 30 minutes. Remove foil and sprinkle cheese and parsley on top. Bake uncovered for 30 more minutes.
