Ingredients

  • 16 oz frozen broccoli, thawed and drained
  • 1 T plus 2 t margarine, divided
  • 1/4 c chopped onion
  • 3 T flour
  • 1/2 t dry mustard
  • 1 1/4 c skim milk
  • 1/2 t salt
  • 1/8 t pepper
  • 1 3/4 c cooked white rice
  • 1 c shredded cheddar
  • 1/4 c mayo

Preparation

Step 1

Cook broccoli in water. Drain. Melt 1 T margarine in saucepan and add onion. Cook 3 minutes or until tender. Add flour and mustard, stirring constantly with wire whisk, 1 minute. Gradually add milk, stirring constantly, 2 additional minutes or until thickened and bubbly. Remove from heat, and stir in salt and pepper. Combine broccoli, milk mixture, rice, cheese and mayo in large bowl. Spoon into 2 qt. casserole coated with cooking spray. Bake uncovered at 350 for 25 minutes.
