Mexican Stir Fry (Fajitas)

Ingredients

  • 1.5 lbs lean beef or chicken, cut into strips
  • 1 T. olive oil
  • 4 cloves garlic, minced
  • 1/2 red onion, sliced
  • 2 bell peppers, any color, sliced
  • 5-6 green chilis, roasted, seeded and peeled (or 1 can, drained)
  • 1 14.5 oz can diced tomatoes
  • Juice of one lime
  • 1 T. fajita seasoning
  • 1 T. green chili flake
  • 1 t. cilantro
  • salt and pepper

Preparation

Step 1

In a large skillet heat olive oil on medium heat. Add onion and cook for about 2 minutes. Add garlic, meat and seasonings. Cook until meat browns (10-15 minutes). Add peppers, chilis, lime juice, and tomatoes and cover. Cook until peppers start to soften (about 5 minutes).

Serve with a salad or on a tortilla or lettuce wrap.
