Ingredients
- 1 stick butter at room temperature
- 2 tbsp chopped chipotle chilies in adobo sauce
- 2 tbsp chopped fresh cilantro
- 1 tbsp tequila
- 8 boneless New York steaks
- Coarse salt and freshly ground pepper
Preparation
Step 1
In a small bowl, using a fork, mix together the butter, chipotles, cilantro and tequila. Spoon onto parchment. Form butter into a log. Wrap tightly and refrigerate until firm, at least 2 hrs.
Preheat the grill to medium high. Season the steaks with salt and pepper. Grill the steaks, flipping halfway through, about 5 mins per side. Transfer the steaks to a platter. Cut the butter into slices and serve on top of the steak.
