cup finely grated parmesan ( preferably Parmigiano-Reggiano)
tsp cayenne (or chili powder or Italian seasoning)
1. Preheat oven 350* and line 2 large baking sheets with parchment paper 2. Toss cheese, flour and spice in small bowl 3. Drop by heaping teaspoon of cheese mix onto parchment leaving 2 inches between mounds 4. Gently spread mounds with fingers or back of spoon into a thin disk 5. Bake until cheese has melted and golden (8-10 minutes) 6. Cool completely on parchment on wire rack then carefully remove with small metal spatula.
