Ingredients
- 1/2 cup quinoa
- 1 cup vegetable stock
- 1/2 tbsp olive oil
- 1/4 cup canned chickpeas
- 1/16 cup parsley, chopped roughly
- Salt and pepper
Preparation
Step 1
Cook quinoa according to package directions using vegetable stock in place of water and adding olive oil.
Once cooked, fluff with fork and toss with chickpeas and parsley.
Season with salt and pepper to taste.
