Ingredients
- 2-3 Fresh Peaches (2 C. ), peeled & chopped
- 1/4 C. Red Onion, finely chopped
- 1 Tbsp. Balsamic Vinegar
- 1 Tbsp. Honey
- 3/4 C. Fresh Parsley Sprigs, tightly packed
- 1/4 C. Fresh Sage Leaves
- 1/4 C. Fresh Rosemary Leaves
- 1 Tbsp. Fresh Garlic, finely chopped
- 1 tsp. Salt
- 1/4 C. Butter, softened
- 6 (4-5oz. ) Boneless, Skinless Chicken Breast Halves
Preparation
Step 1
Combine peaches, onion, balsamic vinegar & honey in a med. bowl. Cover, refrigerate at least 1 hr. Meanwhile, combine the rest of the ingredients (except butter & chicken ) in food processor & process till well chopped. Add butter, process till smooth. Set aside. Heat grill on med. Microwave herb butter on high till softened (30-45 sec.) Place chicken onto grill opposite heat; grill, turning occasionally & brushing with herb butter till chicken is done. Serve grilled chicken with relish.
