JAM - STRAWBERRY FREEZER

Fresh berry flavor remains in these uncooked jams. Refrigerate enough to use within two weeks. Freeze remaining jam.

Ingredients

  • 1 quart fresh strawberries
  • 4 C. sugar
  • 2 T. lemon juice
  • 1 3-oz. pouch liquid pectin

Preparation

Step 1

1. Wash and hull berries. Crush to make 1 3/4 C. crushed berries. If measure is short, add water to make 1 3/4 C. Scald jelly jars with lids.

2. In large bowl, combine crushed strawberries and sugar. Stir to combine well; let stand 10 minutes.

3. In a small bowl, stir lemon juice into liquid pectin. Add to fruit mixture. Stir for 3 minutes.

4. Spoon into prepared jelly jars, leaving at least 1/2 inch room at top. Wipe edges to remove spills and cover with lids. Let stand at room temperature for 24 hours, then freeze until ready to use.
