BUTTER - APPLE

In the old days apple butter was cooked outside in a large kettles over an open fire; it was often the occasion for a family get together.

Ingredients
- 3 lb. tart apples
- 2 C, unfiltered apple cider
- 1 C. granulated sugar
- 1/4 C. light brown sugar
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground cloves
Preparation
Step 1
1. Peel and core apples; cut into eighths. In heavy 6-quart saucepot or Dutch oven, heat apples and cider to boiling. Simmer 20 minutes or until apples are very soft.
2. Stir mixture with fork, breaking up apples, to make sauce. Stir in sugars, cinnamon, and cloves. Cook, uncovered, over low heat, 1 1/2 - 2 hours or until desired consistency, stirring frequently.
3. Pour into sterilized jars, leaving 1/2 inch head space. Seal jars with sterilized lids and rings. Let cool to room temperature and store in refrigerator.
For shelf storage, process immediately in boiling water bath for 10 minutes, according to lid manufacturer's instructions.
