NEW YORK STRIP - CUMIN CRUSTED WITH TOMATO MUSHROOM RAGOUT

Ingredients
- Crust:
- 4 - 1 inch thick NY strips
- 3 Tomatoes, seeded and diced
- 4 Cups mushrooms, chopped
- 1/2 cups parsley, chopped
- fresh butter
- Tabasco sauce
- Worcestershire sauce
- Salt and pepper to taste
- vegetable oil
- 1/2 cup ground cumin
- 1/4 cup paprika
- 1 T oregano
- 1 T black pepper
- 1 T Gumbo File
- 1 T thyme
Preparation
Step 1
Mix together all the spices for the crust. Salt the strips then coat with cumin mix
Lightly oil a non-stick saute pan and sear both sides of the strips. Finish cooking in a 400 degree oven
While the strips are cooking, saute the mushrooms in a little butter When they are almost limp, add the tomatoes and parsley.
Cook until heated through. Season with salt, pepper, Worcestershire and Tabasco.
Cut the steaks diagonally in 4 pieces and serve on a bed of sauteed mushrooms
