Fried Cheese Balls

This ooey gooey snack is the perfect dish to serve at any party. It's so good you won't be able to have just one. Michael Symon.
Ingredients
- 1 cup Farmers Cheese
- 1 cup Hot Italian Sausage (crumbled and cooked)
- 2 cup Sauerkraut (drained and chopped)
- 1/4 cup Freshly Grated Parmesan
- 2 cup Breadcrumbs for dredging
- Salt and Freshly Ground Pepper
- Vegetable Oil to fry
- 1/4 cup Chives plus extra for garnish (finely chopped)
- 1 cup Flour for dredging
- 4 Eggs
Preparation
Step 1
Preheat oil to 350F.
Combine the farmer's cheese, sauerkraut, chives and sausage in a bowl. Mix well.
Add the parmesan and season with salt and pepper.
Roll mixture into golfball-sized balls.
Have three bowls laid out, one with flour, one with the eggs (whisked) and the last with the breadcrumbs. Roll the balls in the flour, transfer to eggs and then dredge in breadcrumbs and transfer to refrigerator.
Refrigerate until firm, at least an hour, and fry until golden brown, about 3 to 5 minutes. Transfer to a paper towel-lined plate to drain.
To serve garnish with a some freshly grated parmesan and chopped chives.
