Ingredients
- 1 1/2 (16 ounce) package bacon
- 2 pints cherry tomatoes
- 1/2 cup mayonnaise
- 1/2 cup chopped green onion
Preparation
Step 1
Cook bacon until crisp. Drain on paper towel, crumble and place in mixing bowl.
Using tip of small knife, core tomatoes. Remove some of the pulp and discard.
Add mayonnaise and onion to bacon and mix well.
Using small knife, stuff portion of mixture into each tomato.
If tomatoes tend to roll, slice thin layer from bottom.
Makes 60 to 80
