Ingredients

  • 2/3 c chopped onion
  • 2 T vegetable oil
  • 1/2 lb ground turkey
  • 1/2 lb turkey sausage
  • 1/2 c parsley
  • 2 garlic cloves, minced
  • 1 t oregano
  • 1 t basil
  • 2 cans Italian stewed tomatoes
  • 6 cups chicken broth
  • 1 medium zucchini, sliced
  • 1 pkg (10 oz) frozen mixed vegetables
  • 1 can kidney beans, rinsed and drained
  • 1 1/2 c cooked elbow macaroni
  • 2 T cider vinegar

Preparation

Step 1

In a large kettle over medium heat sauté onion in oil until tender, about 4 minutes. Add next 6 ingredients, cooking until meat is no longer pink. Add tomatoes, broth, zucchini and mixed vegetables. Cover and cook on low for 5 minutes. Add beans, macaroni, vinegar, ½ t salt if desired, a pinch of pepper. Simmer 3-4 minutes until heated through.
