- 1/2 lb. (2 sticks) sweet butter
- 2 cups granulated sugar
- 2 cups chunk-style applesauce*
- 3 cups unbleached all-purpose flour
- 1 teaspoon ground cinnamon
- 1 teaspoon freshly grated nutmeg
- 2 teaspoons baking soda
- 1 teaspoon vanilla extract
- 1 cup raisins
- LEMON-ORANGE ICING
- 1 cup confectioners' sugar
- 1/2 teaspoon ground cinnamon
- 11/2 tablespoons fresh lemon juice
- 11/2 tablespoons fresh orange juice

Method
1. Preheat oven to 325°F. Butter and flour a 10-inch tube
pan.
2. In a mixing bowl, cream together butter and sugar until
light and fluffy. Stir in pureed applesauce and vanilla, mixing
thoroughly.
3. Sift flour, cinnamon, nutmeg, and baking soda together;
then sift dry ingredients over applesauce mixture, sprinkle in
raisins, and blend gently but thoroughly.
4. Pour batter into tube pan and set on the middle rack of
the oven. Bake for 1 hour and 10 to 15 minutes, or until a cake
tester inserted into the cake comes out clean.
5. Cool in the pan for }b minutes. Turn out onto a cake
rack and cool completely.
6. When cool, drizzle with Lemon-Orange Icing.
Lemon-Orange Icing
1. Sift confectioners' sugar and cinnamon into a small
bowl.
2. Dribble in juices, stirring constantly until icing is
smooth. Drizzle over cooled cake.
