Chinese Style Plum Sauce

Good with duck and pork. Make in small batches and store in the refrigerator.

Ingredients
- 15 red-skinned plums (preferably w/red flesh, too), about 2 1/4 lbs., pitted and chopped
- 2 c. red wine vinegar
- 1 tsp. salt
- 1 tsp. dried red chili flakes
- 3 star anise, tied up in a piece of cheesecloth
- 1/2 dark soy sauce
- 2/3 c. firmly packed light brown sugar

Step 1
1. Put the plums, vinegar, salt, chili flakes and bag of star anise in a heavy saucepan and bring to a boil. Reduce the heat and simmer until the fruit is completely soft; this takes about 20 minutes.
2. Push the plum puree through a nylon strainer into a clean saucepan. Add the soy sauce and sugar and bring slowly to a boil, stirring to help the sugar dissolve.
3. Reduce the heat and cook on very low heat for about 45 minutes. The mixture should be fairly thick (like th plum dipping sauce you get in Chinese restaurants). Pour into warm sterilized jars, then cover and seal w/vinegar-proof lids. It will keep in the refrigerator for 2 months.
